Zucchini Carrot Bread

3 Eggs
1 c. Oil
2 tsp. Vanilla
2 c. Flour
1/2 tsp. Baking Powder
1 tsp. Salt
1 tsp. Soda
1 Tbsp. Cinnamon
2 c. Grated, Unpeeled Zucchini
1 c. Grated Carrots
2 c. Walnuts, chopped
1 c. White Raisins
In large mixing bowl beat together sugar, eggs, oil and vanilla.
In a separate bowl combine flour, baking powder, salt, soda and cinnamon.
Stir dry ingredients into wet ingredients alternately with zucchini and carrots.
Stir in nuts and raisins.
Divide batter between 3 greased loaf pans.
Bake 1 to 1 1/2 hours at 325°
